Family Food on Sunday
The get-together is at our pad at 4:00 on Sunday. Cora and I are making the chicken tetrazinni. We could use a:
salad of sorts -- mom
a modest dessert -- coralee (cake and i.c.) and mom (adult dessert)
fruitish/veggetish something -- shannon (fruit)
bready something -- scott and julie
forks, paper plates, napkins -- mom
moral support (Derek and Kiyomi could sign up for this one).
Call and confirm or blog to me.
We are super excited to see you. Cora-- what do you want to do with birthday cake for the kids? Yes!
Chicken tetrazzini:
LAYER
(in a 9x13, and usually there is enough for a small brownie pan as well):
fetaccini or spaghetti, a small package, or enough to fill up the depth of the pan by one-half
bacon, usually cooked until crumbly, but you can cut it into small bits as well
chicken; boil it or nuke it, cut it or shred it
mozzarella cheese
Then pour the roue over the top of it; sprinkle with parmesan cheese, cover and bake at 350 for about 30 minutes. This keeps well in the fridge pre-baked for about a day or two; it's a great RS dish.
Roue:
Brown: a stick of butter or margarine, a smallish onion, a thing or two of mushrooms, a little garlic powder, some salt and pepper
Then add in a cup or a little more of chicken broth (perhaps left over from the boiled chicken. I usually use bouillon cubes), a cup of milk, and a small carton of half and half. Stir this constantly and bring to a boil. As it nears the boil, start pitching in flour to thicken it. Small hand fulls. Don't make it too thick; you want it to coagulate, but still drip down into the noodles a little when you pour it over the casserole. Some people like to add extra mozza on the top as well.
